Background
A seafood processor was drying sea cucumbers with coal-fired heat, which caused case hardening, surface scorching and inconsistent rehydration behaviour from batch to batch.
Solution
We replaced the coal-fired drying with AOBOTE heat pump technology. The low-temperature circulating airflow prevents the surface from hardening before the inner flesh is dehydrated, so the marine flavour and texture are preserved.
Results
The dried sea cucumbers come out plump with a consistent, high-quality finish and reliable rehydration. Operating costs dropped significantly, and the process no longer emits open flames or smoke near the product.
